On March 12, I had the wonderful opportunity to share some of my baked goods at the Easter EGGstravaganza community event held at Concordia Church & School in Chula Vista. I had a dessert table with a few cakes that I donated to the event’s raffle, and also showcased my friend, Shing Bakes, beautiful custom cookies. My favorite part of this event was meeting plenty of folks from the local community while promoting my business. I was in my element at this event, and it took me back to my college days when I had a part-time job of promoting brands from beauty products, to cars, and everything in between. In this era of impersonal social media, there’s nothing better to me than to have good old-fashioned in-person conversations! The 200+ samples of mini Easter cupcakes and chocolate-covered pretzels I brought were gone within the first hour! What a SUCCESS! A BIG THANK YOU to Concordia Church & School for an awesome, very organized event! My kids had fun checking out other local businesses, getting freebies, and Easter egg hunting! I hope to do this again next year, and I promise to bring a bunch more freebies!

A special thank you to those who recently hired me to be part of their special family memories, from birthdays to “just because I Love You!” I really put my all into your cakes, and I hope you can tell in their taste & overall design!
Pictured above are:
- 3D Minion fondant cake – 6″ round, 3 layers of cake & 2 filling layers, up to 24 servings. Carrot cake with cream cheese filling.
- Minecraft KitKat Cake – 8″ square, 2 layers of different cake flavors, fresh fruit filling, wrapped with Kit Kat candy bars! Neapolitan cake (chocolate & strawberry) filled with vanilla cream & fresh strawberries. Custom paper image toppers & toy toppers provided by client. Matching custom Minecraft cupcakes for everyone in school to enjoy!
- Torched Meringue Runner’s Cake – 6″ round, 3 layers of Swiss chocolate cake & two different fillings (chocolate & cream cheese), covered in delicious chocolate ganache, decorated with torched marshmallow meringue, and topped with a custom edible fondant runner’s medal.

- A) Number of people you are serving. I use the Wilton Cake Serving chart standard to determine number of servings & base price.
- B) Whether you would like the cake covered in buttercream or fondant. Please see my custom cakes page beforehand for more info.
- C) Include the details of the design, such as shape, number of tiers, cake toppers, etc. Please include as much detail as needed for an accurate quote. If you have photo examples, that will be a huge help!
- D) Flavor of cake & filling preferences. I can make almost any flavor, so it’s better to tell me what you want.

I got into baking in 2013 when I decided to tackle my eldest son, Nathaniel’s first birthday cake, and the rest was history. Here I am about two and a half years later making my youngest son, Benji’s first birthday cake! This time I wanted to make a three-tier fondant cake, which I haven’t done before using larger pans. The top tier is a 6″, middle is an 8″, bottom tier is a 10″; total servings are 60.
Benji’s birthday is the day before Valentine’s Day, so that being a holiday week was already an extremely busy baking week for me! I ended up having to do all of the decorating the night before his party, rather than spreading out the fondant prep a couple days ahead like I usually do. I made the cake sketch based on a few inspiration “Little Man” themed cakes I liked from Pinterest, but also applied my color scheme. It seemed simple enough, but in the end, I had to pull an all-nighter! AHH! I hadn’t done such a feat since my college days cramming for finals! In the end, I made it all work by making some changes based on looks and time, and I was able to get it done! I was really happy with the final look, even though there were a few elements I would change if I had more time.
The most important thing is that everyone RAVED about the taste! I have been getting a lot of compliments on my flan cakes, so I incorporated flan into the two biggest tiers: red velvet with cream cheese & flan, and marble with Oreo buttercream & flan. I decided not to make a smash cake for Benji due to my time shortage. I knew a slice of the top tier would suffice, and he would have just as much fun eating it and rubbing it in his hair as you can see in the photo below!

I can’t believe my “littlest man” Benji is already ONE! This year flew by so fast! I hope to share these memorable birthday moments singing to my boys as a family surrounding their special cakes that Mommy stayed up all night making them…and that’s okay. It doesn’t bother me, I have a great coverup for the dark circles under my eyes. I would do anything for my babies!
